FYI in case you run out of time to can this year - I freeze my 70 quarts in plastic containers I buy from a restaurant supply store. It requires freezer space obviously, but boy is it a lot easier that standing over the stove for yet another harvest project! I also have frozen tomatoes whole and bagged them, to take out and use at a later date. They work great for anything that's going to be pureed or go through a food mill.
